Apple and Almond muffins

25g of butter50g of flour1tbsp of brownsugar (removed from the 100g below)250g of flour2tsp baking powder1tsp bicarbonate of soda1tsp cinnamon3 apples - peeled and cored1 500ml packet of buttermilk1 egg
1. Heat oven to 180C
2. Line muffin tray with paper cases
3. Rub butter and 50g of flour to make fine "breadcrumbs". Add the tbsp of sugar and chopped almonds. Set aside
4. Grate 2 apples and beat with buttermilk and egg - you may need less buttermilk so save some and only add it all if mixture is too dry.
5. Sift dry ingredients together. Make well in centre and add wet ingredients gently taking care not to overmix.
6. Fill cases 2/3 with mix (I have very small cases so this recipe made 18 for me).
7. Sprinkle almond mixture on top and poke thin slices of apple intotop.
8. Bake for 20mins or til risen and golden.
