Barbecue Tempeh

Ingredients
8 ounces Organic Five Grain Tempeh, cubed 1/2 cup BBQ Sauce of choice (I used Annie's Organic Chipotle)1/2 cup Contadina Pizza Sauce (could sub in spaghetti sauce or tomato sauce with extra spicing)1/4 cup Wickles Hoagie & Sub Sandwich Relish1 can Artichoke Quarters in Water, drained and diced1 cup chopped onions2 cups sliced mushrooms1 tbsp olive oil
Directions
Marinade tempeh in bbq sauce, pizza sauce and red pepper relish for at least a couple hours, preferably overnight. Heat up nonstick skillet with olive oil. Add onions and mushrooms. Let simmer, stirring frequently. When onions begin to brown, add tempeh mixture. Let simmer, covered for 15 minutes. Stir occasionally. Add artichokes and let simmer for another 10 minutes.

Makes 7 1/2 cup servings servings. You can eat this on a whole wheat bun or you can eat it over ww noodles.

    I put together and baked it in the oven, after a day of marinating. (Spark bbq tempeh recipe did that) Chose this recipe for vegetables & Contadina & BBQ sauce. Used 1/4 cup BBQ Sauce as it was spicy to me,&added veggie broth. Chopped tempeh after cooking rather then leaving cubes. Great, loved it. - 4/9/17

    Awesome. I made this for my newly vegan BFF (boyfriend forever) and he will eat it allll up! I didn't even have the extra veggies and it was still great just plain tempeh with the marinade. - 2/5/10
