Sweet and Spicy Baked Grouper

8 Grouper fillets4 cups cooked white rice1/2 cup Lawry's Mexican Chile and Lime Marinade2 Tbsp White Wine Vinegar2 Tbsp granulated sugar1 stalk celery, chopped1/2 cup chopped onion1 tsp garlic powder1 tsp salt 1 tsp pepper1 tsp paprika 8 grape tomatoes, sliced1Tbsp parsley
Makes about 4 1-cup servings
1) Preheat oven to 375 degrees. Spray baking sheet with cooking spray. Place fish on baking sheet and add spices evenly. Bake fish for 6-10 minutes depending on the thickness of fish.
2) While fish is cooking, saute celery for 3 minutes. Add onions and cook for an additional 3-5 minutes.
3) Add water, vinegar, sugar and marinade to veggies. Heat just until bubbly.
4) Spoon about 1Tbsp of sauce and veggies over rice. Place 2 fillets over rice. Then spoon one more Tbsp of sauce and veggies over fish.
5) Top with tomatoes and parsley.
