Vegetarian "Beef" Bean, & Cheese Burritos

Boca Burger Soy CrumblesLaTortilla Factory Traditional WrapsKraft Free Shredded Cheddar CheeseOld El Paso Fat Free Refried Beans4 Mushrooms1/2 Green Bell PepperTaco Seasoning MixSmall Onion1 TBS Olive OilCooking Spray
Coat Large skillet with cooking spray. Add 1 TBS olive oil.
Chop onion into small pieces and heat in skillet. Dice 1/2 Pepper, add to skillet, chop mushrooms, add to skillet. Saute all veggies until soft/cooked.
Add 1.5 Cup Boca Ground Crumbles. Heat, stirring frequently until crumbles are heated through.
Add 1 Can Fat-Free Refried Beans. Stir.
Add 1/3 Cup Water and Taco Seasoning Mix. Stir until well mixed.
For more flavor: add cumin, dark chili powder, Cayanne seasoning to taste. For less salt, choose low sodium taco seasoning mix.
cover and simmer on low/medium about 10 minutes, stirring occassionally.
Place tortilla on plate. Heat in microwave on high 15 seconds. Sprinkle .25 cup cheese on tortilla. Add 1/4 of the bean mixture from stove. Garnish with lettuce and taco sauce of choice. Enjoy!
Makes 4 servings. GREAT family dinner, and a GREAT way to sneak in extra veggies.
