Weight Watchers Italian Skillet Chicken

Ingredients
2 tsp. olive oil1 onion, chopped1 carrot, chopped1 celery stalk, chopped10 oz. boneless skinless chicken breast strips, coarsely chopped1 can crushed (or diced or stewed) tomatoes1 tsp. basil1/2 tsp. salt1/4 tsp. pepper
Directions
Heat oil in a lg. non-stick skillet over medium high heat. Add onions, carrots, and celery: cook, stirring occasionally, until softened, about 10 minutes. Add the chicken and cook, stirring occasionally, until the chicken is opaque, about 5 minutes. Stir in tomatoes, basil, salt, and pepper. Reduce heat to simmer, stirring occasionally, until the flavors are blended and the chicken is cooked through, about 10 minutes. While cooking chicken and veggies put your penne on to cook following package directions. Serve chicken mix over the penne.
