Balsamic Honey Dijon Potatoes

Ingredients
400 grams (about 7-8 small) red potatoes1 Tbsp Extra Virgin Olive Oil1 Tbsp Balsamic Vinegar1 Tbsp honey1 Tbsp Dijon mustard
Directions
1. Mix olive oil, balsamic vinegar, honey & mustard in a medium bowl until well blended.
2. Clean potatoes and slice into halves or quarters.
3. Place potatoes in bowl with dressing mix, cover with lid and shake to coat well.
4. Bake in 350* oven for 40-50 minutes until cooked through.
5. If fixing with the Broiled Pork Chops, you can add them to the broiler for a few minutes at the end for added crispiness.
