Simple Roasted Red Potatoes

Ingredients
1-1/2 pounds peeled red potatoes1 tablespoon extra virgin olive oil1 teaspoon Mrs. Dash seasoningSalt, as desired
Directions
Preheat oven to 425 degrees.

Cut potatoes into quarters and place in a mixing bowl. Add the olive oil and toss to coat the potatoes. Add the seasoning and toss to coat. Turn out into a cast-iron skillet (preferred) or oiled baking pan to hold potatoes in one layer. Bake for 20 minutes. Shake skillet/pan to loosen potatoes so they turn. Bake another 20 minutes. Shake pan again. Check for doneness. The potatoes should be very soft on the inside.
