Cranberry Lemon Quinoa Salad

Ingredients
1 cup quinoa1/2 cup dried cranberries1/2 cup diced red bell pepper1/3 cup chopped dried apricot1/3 cup whole raw cashews1 tsp lemon zestDressing:1 tbsp canola oil1 tbsp fresh lemon juice2 tbsp Champagne Vinegar0.25 tsp dried mint0.25 tsp dried parsely0.25 tsp dijon mustard
Directions
Cook quinoa according to instructions on package.
Mix together dressing ingredients while quinoa is cooking.
When quinoa is finished cooking add the rest of the ingredients, pour dressing over salad and mix. Serve hot or cold.
