Ingredients
3 cups old fashioned oats1 &1/2 cups Bob's Red Mill Gluten Free All Purpose Baking Flour1/2 c oat bran1/3 cup Lecithin (optional)1/2 cup Splenda1/2 cup honey1 whole egg plus 2 egg whites1 tsp baking soda1/3 cup oil1/2 cup applesauce1 lrg or 2 small bananas, mashed1/2 to 2/3 can of crushed pineapple, drained1 tsp vanilla extract1/2 cup chopped pecans or walnuts (optional)
Directions
Place rounded Tablespoons onto lightly sprayed cookie sheet and flatten slightly. Bake at 350 degrees 15-20 minutes until light golden brown.
