Ingredients
6 tbl olive oil2 cups raw chopped onions16 cloves garlic2 tbl oregano4 tbl basil2 tsp salt1.5 tsp ground black pepper1 cup diced celery, cauliflower, capsicum, zucchini2 cups chopped carrots, mushrooms4 cups chopped tomatoes50 gms granulated sugar3 tab balsamic vinegar
Directions
fry onions, herbs seasonongs until onions are soft. Add sugar and vinegar, then tomatoes. Add hard vegies and soften about 5 mins, then rest of vegies, wine and slow cook. Bottle in sterilised jars - I use 500 mls old commercial pasta sauce bottles.
