Pinto bean Salad

Ingredients
3 TBS lime juice2 TBS corn oil3TBS chopped fresh cilantro1 TBS minced jalapeno1 tsp minced garlic1/2 tsp ground cumin seed1 can pinto beans (you could use black beans, or kidney beans as well)1/2 cup chopped red onion1 cup chopped peppers, I use a combination of red & yellow, but any peppers will do
Directions
Mix together lime juice, corn oil, cilantro, jalapeno, garlic & cumin.
Add beans, onions, and peppers. Toss to coat well.

Cover and refrigerate for several hours or overnight.

Drain before serving.
