Kelly's Meatloaf Mushroom Muffins

Ingredients
500gms ground beef1 onion, finely chopped1 pkt dry mushroom soup1 tsp garlic powder1 cup fresh mushrooms, sliced or diced1 egg, medium1/2 cup wholemeal breadcrumbs1.2 cup tomato sauce or ketchupEnough grated parmesan cheese for the top of each muffin (about 1/2 cup).
Directions
1. Mix all ingredients together in a bowl. Be sure they are all combined well.

2. Spoon meat mixture into sprayed 12 hole muffin pan. Fill each to the top.

3. Add a little grated parmesan cheese to the top of each.

4. Bake on 350F for around 30-35 minutes, or until nicely browned and cheese melted on top.

Very tasty!
Serve for lunch or dinner with a crisp green garden salad and maybe a dollop of creamy mashed potato.

    I made this with a few miner altercations. I omitted the onions and soup, used quick oats instead of bread crumbs, and 1/4 cup bbq sauce instead of the ketchup. It was a huge hit! - 8/10/11
