Jenny's Veggie Bacon Quiche Loarraine Tartlets

1 pkg Refrigerated pie crusts (2 crusts), softened according to package directions2 eggs1/2 cup non fat organic milk1/8 tsp sea salt4 Slices of Morning Star Vegetarian bacon3 Mini Sweet Peppers1/2 cup Mozzarella Cheese (skim milk)Crushed Red Pepper to taste
Preheat Oven to 400 F. Unroll one pie crust onto lighty floured surface. Spacing closely together cut 12 disks from crust. Press disks well into Pampered Chef Mni Muffin pan using Mini-Tar Shaper ruffling the edges. Repeat with remaining crust.
Whisk egg, milk, crushed red pepper and salt in bowl. Set aside for now.
Finely Chop Veggie bacon and Mini peppers using Food Chopper. Add to Egg mixture.
Pour evenly in each tart shell. Sprinkle cheese evenly on top of each tart shell. Cook in oven for 14-16 mins or until crust is golden brown.
