gluten-free carrot ginger muffins

1 C featherlight baking mix2 tsp baking powder1/2 tsp ground ginger1 tsp cinnamon1/4 tsp allspice or 5 spice powder1/2 tsp xanthan gum1 tsp egg replacer1/4 C brown sugar1/4 C granulated sugar2 Tbsp butter1 medium carrot, grated1/2 tsp vanilla1/4 milk
cream butter and sugars. beat in egg. mix dry ingredients in seperate bowl. Beat vanilla and carrots into sugar mixture. alternate adding milk and dry mixture. spray muffin tin with cooking spray. pour batter into tins. bake at 350 until toothpick inserted into center comes out clean.
