Broccoli Chicken Casserole

3 lbs uncooked boneless, skinless chicken breast 2 cans 98% fat free cream of chicken soup 14 oz frozen broccoli florets, cooked 2 cups (8 oz) 2% milk Mexican Cheese, shredded2 packages chicken flavor bread stuffing dry mix, prepared per instructions on box
Remove excess fat from chicken, boil until done. Let cook slightly then cut into bite size pieces.
Combine cooked chicken breasts with soup in bowl (no additional liquid required).
Place cooked broccoli spears in 9x13 baking dish. Next spread chicken mixture over broccoli.
Sprinkle grated cheese on top of chicken mixture.
Top with prepared stuffing. Bake uncovered at 375 degrees F. for approximately 30 minutes or until hot and bubbly.
