Parsley Potatoes (for two!)

Ingredients
1.5 cups Potatoes with skin (I used mini white potatoes, about 5-6 of them total, and quartered them)2 cups Water2 Tbsp Olive Oil1/2 tsp Sea Salt3 Garlic Cloves, chopped3 Tbsp fresh Parsley, chopped3 Tbsp Green Onions, chopped1/4 tsp Ground Black Pepper
Directions
1. Place chunked potatoes, water, 1/2 Tblsp Olive Oil, & 1/4 tsp Salt in a small pot. Turn stove on high & allow to boil until potatoes are soft enough to eat.
2. Drain water. Pour remaining Olive oil in pot along with the drained potatoes and all other ingredients.
3. Stir on medium-high heat for about 5 minutes.
4. Serve fresh & hot.
