EASY Low Cal & Fat Pumpkin Spice Cookies

1 box Spice Cake Mix (any brand is fine)1 - 15 oz. can pumpkin* OPTIONAL: 1/3 - 1/2 bag of Semi-Sweet chocolate chips. This *does* change the values, so keep that in mind. Just a little bit goes a long way without making these horribly bad!
Preheat oven to 350.
In a bowl, mix thoroughly the can of pumpkin and cake mix. If you chose to add chocolate chips, add now.
Drop by tablespoon fulls onto cookie sheet (spray with cooking spray for easier removal).
Cook 10-20 minutes (this is all contingent on the SIZE of the cookies...but they're almost impossible to burn).
They will be gooey! They will be soft and squishy. Let them cool about 5 minutes and move to rack to cool completely. They won't harden up though.
Enjoy!

This was a big hit at our house! I got 6 dozen cookies from this. I used a teaspoon to put clumps on the cookie sheet and then flattened them with the bottom of a custard cup (put a little sugar in one custard cup, coat bottom of another custard cup with cooking spray, then dip it in the sugar). - 4/5/11
