Mushroom and bacon stuffed peppers

Ingredients
1 Large Bell pepper1/4 cup Monterey cheese1/4 cup cooked mushrooms1 piece bacon crumbled1/2 tbsp extra virgin olive oil
Directions
Preheat oven to 375

Cook mushrooms with cooking spray
Cook bacon at the same time

Cut pepper in half lengthwise and scoop out seeds

Brush olive oil on pepper and fill pepper with bacon and mushrooms

Top pepper with cheese and stick in oven for 15 minutes or until cheese is melted and bubbly.
