Lamb Curry

Ingredients
1 tbsp olive oil12 ounces boneless leg of lamb, diced1 1/2 cups of chopped onions1 cup diced carrots1 cup diced celery1/2 cup frozen early peas2 cubes of House The Curry Hot2 tbsp Patak's Hot Curry Paste1 cup low sodium vegetable broth2 cups water
Directions
Heat up oil in medium sauce pan. Add lamb and onions - saute until onions begin to soften and lamb is browning. Add celery, carrots, broth and water. Let simmer for 30 minutes or until lamb is tender. (May add extra water). Add peas, curry pastes and stir. Let simmer for 5 - 10 minutes more. Makes 5 1-cup servings.
