Ingredients
Broccoli, fresh, 6 cup, chopped (remove)Onions, raw, 1 cup, chopped (remove)Celery, raw, 1 cup, diced (remove)Carrots, raw, 1 cup, chopped (remove)Garlic, 3 clove (remove)*Potato, raw, 5 small (1-3/4" to 2-1/2" dia.) 1 bay leaf1 Tbsp. thymeLow-sodium vegetable stock as needed to coverSalt and pepper to taste
Directions
Heat 1 Tbsp. of olive oil in a large pot over medium heat. Add the onion, carrots and celery. Saute until the vegetables are fragrant and soft.
Add the remaining ingredients and cook for 30-40 minutes until the potatoes are cooked through.
