3 large eggs - separated1/2 cup sugar (caster sugar is better)7 oz cream cheese - at room temperature1/4 cup milk2 tbs lemon juice1/2 tsp cream of tartar1/4 cup cornflour (corn starch)
Spray a 9" tin with cooking oil. Preheat oven to 350 F
Separate eggs, beat egg whites till stiff, add 1/4 cup sugar and cream of tartar
Beat cream cheese and milk till soft, add 1/4 cup sugar, lemon juice, egg yolks and cornstarch, beat till creamy, fold in beaten egg whites.
Pour into prepared baking tin, place tin in larger baking dish and pour boiling water to cover up to 1/2 way of the baking dish.
Bake at 350 F for 35 to 40 minutes
Serve Plain or Sprinkle with Icing sugar - enjoy!!!
