Baked Broccoli and Eggplant

Ingredients

1 cup eggplant cubed3 bunches broccoli chopped 1 Tbsp Olive oil2 Tbsp basil1/2 tsp cayenne pepperpinch of salt
1.Boil water in a large pot.
2. Add broccoli and boil for 2-3 minutes.
3. Transfer to a bowl of ice water to stop the cooking process.
4. Put broccoli and eggplant in a baking dish.
5. Add salt, pepper, basil, ollive oil and coat the vegetables well.
6. Bake at 375 degrees for 35- 40 minutes.
7. Enjoy!
