Ingredients
¨ú cup brown sugar¨÷ cup granulated sugar1 cup all-purpose flour¨ö cup flaxseed meal¨ö cup almond meal1 teaspoon baking soda1 ¨ö teaspoon cinnamon3 cups quick rolled oats¨ö cup chopped dried apple1 ¨ö cup butter or margarine, softened3 eggs or egg substitute equivalent1 Tablespoon vanilla
Directions
Preheat the oven to 375¨¬F. Mix the first 9 ingredients in a large bowl with a wire whisk until combined. Set aside. In a large bowl of an electric mixer, cream the butter, eggs, and vanilla. Add the dry ingredients and stir until the mixture until well blended. Drop the cookies by rounded tablespoons onto ungreased cookie sheets. Bake for 10-12 minutes. Cool 1 minute, then remove to wire racks to cool.
If making cookie bars, spread in a cookie sheet with sides, then bake for 20 minutes.

    I went to look at this recipe and the ingredient measures are not readable. I suspect that is due to 1/2 becoming the special character for same, but it is not readable as is. - 3/2/10
