Couscous chickpea Salad

Ingredients
Green bell peppers, 0.5 cup, choppedOnions, raw, 1 smallCucumber (with peel), .5 cucumber Chickpeas, canned, 1 cupRed Ripe Tomatoes, 1 cup cherry tomatoesCouscous, 2 cup, cookedLemon Juice, 1 lemon yields Pepper, black, .5 tsp Salt, 1 tsp Cilantro, raw, 3 tbsp
Directions
Mix everything but couscous together. Leave aside to let flavours blend while preparing couscous.
To prepare couscous place 2/3 cups dry couscous in a bowl. Add 2/3 cup boiling water to it and cover. :Let it stand about 5 min thereafter flake using a fork and cool.
Once couscous is cooled add to salad and serve.
Make four servings.
