2 cups pumpkin puree (or 1 15 oz can)1 cup unsweetened applesauce2 medium eggs (or 1/2 cup egg substitute or egg whites)2 cups sugar (or 1 cup sugar, 1 cup Splenda)3.5 cups flour2 tsp baking soda1 tsp baking soda2.5 tsp pumpkin pie spice1/2 tsp salt1 cup chocolate chips, nuts, dried fruit or other add-in
Preheat oven to 350 F
spray 2 8x4x2 loafs pans with cooking spray
mix wet ingredients in large bowl
mix dry ingredients in separate bowl
add dry ingredients to wet and combine thoroughly
stir in chocolate chips or other add-ins
divide between loaf pans
bake at 350F for 50-60 mins or until toothpick in center comes out clean
makes 20 slices (10 per loaf)
