Asian Tuna Cake

Ingredients
1 Can Tuna, in Water1 cup cooked, mashed Acorn Squash*2 chopped Green Onion2 grated Baby Carrots1 minced Garlic Clove1/4 cup finely chopped Water Chestnuts1 tbls finely chopped Fresh Cilantro1 finely chopped small Serrano Pepper, with or without seeds, depending on how spicy1 egg Juice of 1/2 lime (about 1 tbls)1/4 cup Japanese Panko Bread Crumbs1 Tbls Olive Oil2 Tbls Asian Sweet Chilli Sauce
Directions
Combine First 11 ingredients. Refrigerate 1/2 hour. Form into 2-4 patties. Roll in Panko Crumbs. Fry in either olive oil or nonstick spray. (Nutritional data with oil) Cook until browned on both sides.

Serve with Asian Sweet Chilli Sauce
