Whole wheat crepes

Ingredients
3 large eggs3/4 cup non-fat milk3/4 cup water1/2 cup of whole wheat flour1/2 cup of all-purpose white flour1 tbls of canola oil
Directions
Combine all wet ingredients in a medium bowl with a whisk, except the oil. Add both flours, mix. Add oil.

Heat a non-stick 10 in frying pan over medium heat. Add 1/4 cup of the batter to the pan, tilt the pan until the batter covers the entire bottom of the pan (avoid getting it on the edges of the pan). Cook until the batter appears to be solid(about a minute) and then flip and cook about a minute more.

Filling: I generally stuff them with a low-fat cottage cheese, applesauce and cinnamon combination, but you can fill them with anything (fresh berries, fruit compote, fried apples, nutella, jams, etc).

Serve immediately, makes 12 crepes.
