Pomegranate muffins

* *Flour, white, 2 cup * Granulated Sugar, .66 cup * Baking Powder, 3 tsp * Salt, .5 tsp * Lemon or lime Peel, 1 tsp * Pomegranates, 1.5 pomegranate (3-3/8" dia) * Milk, nonfat, 1 cup * Egg, fresh, 1 large * Olive Oil, .25 cup
In a bowl mix first 4 ingredients. Stir in Lime peel and pomegranate seeds.
In a measuring cup mix the milk,egg and oil. whisk to blend.
Make a well in the middle of the dry ingredients and add the contents of the measuring cup.
Mix till all moistened. Will appear lumpy. Pour into 12 muffin tins. Cook for 15-20 minutes in a preheated 425 degree oven until lightly brown.
