Stromboli

Ingredients
1 tube refrigerated pizza crust dough (13.8 oz)1/3 c finely shredded part-skim mozzarella2 large artichoke hearts, thinly sliced (1/2c)2 oz roasted red peppers, thinly sliced (jarred, packed in water)1/2 c Shiitake mushrooms, sliced (1/2 a 4oz can)1/3 c chopped onions17 slices Hormel Turkey Pepperoni
Directions
Preheat oven to 375. Line a baking sheet with foil, and spray with nonstick spray.

On a lightly floured surface, turn out dough and press out to an 8x12 rectangle. Sprinkle with cheese, leaving a 1-inch border around the edges. Top with desired toppings. Starting with a short end, roll up the dough jelly-roll style to enclose fillings, and crimp the edges to seal.

Place Stromboli seam-side down on the baking sheet. Bake until golden brown and crusty, about 20-25 minutes. Cut into quarters and serve piping hot.
