Sunday Morning Strawberry Pancakes

Ingredients
1/2 cup egg substitute2 cups lowfat buttermilk1/2 cup water2 Tbsp canola oil2 Tbsp brown sugar1 tsp salt1 cup whole-wheat flour1 cup white all-purpose flour1 cup wheat bran1 tsp baking soda2 tsp baking powdercooking spray to coat griddle18 large strawberries12 Tbsp light whipped topping
Directions
In a large mixing bowl, whisk together egg substitute, buttermilk, water, oil, and brown sugar. Pour both flours and wheat bran on top of mixture (do not stir in yet) and on top of that the salt, baking soda, and baking powder. Gently whisk until mixed thoroughly.

Cook on a griddle lightly coated with cooking spray. Recipe makes 18 pancakes, 3 pancakes to a serving. Top each serving with three strawberries and 2 tablespoons of whipped topping. May be served with maple syrup if desired. (Syrup not included in nutritional counts.)

    No buttermilk? Use 1 tsp. white vinegar or lemon juice to each cup of low-fat or non-fat milk. Didn't have wheat bran so I doubled the whole wheat flour. Deleted salt for low-sodium; added chopped walnuts and served with banana slices. Yummy! - 7/24/10

    I made this recipe as waffles. They taste great. They are sweet enough that they don't need syrup or very little if you really want syrup. I had blackberries with my waffle, not in my waffle but that would be good also. Thanks for the recipe. - 1/18/10

    mmmm...these were so good! Thank you! Even the "whole grain" haters in the family liked them! I added some no sugar pancake syrup as well. The kids added some banana.I wasn't sure how much batter to use per pancake so used 1/4c and turns out that was perfect to make 18 generous size pancakes! - 2/13/10
