Moist 'N Tender Savory Turkey Meatloaf

3 lbs. lean ground turkey (a combo of dark & white meat)1 cup instant oatmeal (about 6 packets)1 large red pepper, diced into small bits1 large or extra-large zuchinni, shredded1 medium carrot, grated1 medium yellow onion, grated or very finely chopped2 eggs1/4 c. roasted garlic marinara sauce1 1/2 tsp salt1 tsp freshly ground black pepperOptional - if you want more of an Italian flavor, add 1 tsp. each of dried oregano and dried basil
Preheat oven to 375 degrees. Place all ingredients in a large bowl and mix thoroughly. The non-meat ingedients should be evenly distributed throughout the ground turkey. Form two meat loaves with your hands and place them in a large, non-stick pan. Pour about 1/4 c. water in the bottom of the pan, cover securely with aluminum foil, and bake for 60 minutes. Remove the foil and bake an additional 15 minutes to brown the top of the loaves. If you wish, spread 2 Tbsp. of roasted garlic marinara sauce on top of each loaf during the final 15 minutes of baking. When done, remove from oven and let the meat loaves rest for 15 minutes before serving.

I can't believe how delicious and juicy this meatloaf is! You would never guess that it has grated zuchinni in it. The texture is great and the flavor is awesome.
