Crustless Quiche

Ingredients
10 strips of bacon, cooked crisp and crumbled6 eggs, beaten3/4c heavy cream2 1/2c frozen chopped broccoli OR spinach OR asparagus1/2lb cheese, shredded1/2tsp salt1/4tsp ground pepper
Directions
Heat oven to 350*F

In large skillet, cook bacon until crisp and chop up. Remove all but 1tbsp of drippings. Add onion(optional) and cook until desired colour.

In a large bowl combine eggs, cream, vegetable of choice cheese, salt and pepper. Stir in bacon and onion.

Pour mixture into buttered 10in tart an or 9in deep pie plate. Tent with foil. Bake 1 hour and 15 minutes or until a knife comes out clean. Last 15 minutes remove foil for browning.

Cool 5 minutes and cut into wedges.

Makes 10 servings.
