Slow Cooker Glazed Cornish Hen

•1 large apple, cored, cut in quarters•1 tablespoon soy sauce•4 Rock Cornish game hen halfs•1 cup dry white or blush wine•3 tablespoons orange or apricot marmalade•1/2 lemon, juice and rind•1/2 teaspoon salt•1/8 teaspoon pepper
- Preheat broiler
- Line a backing sheet with aluminum foil. Using kitchen shears, cut backbones from game hens. Cut hens through breast bones.
- Place hen halves on baking sheet, skin side up. sprinkle with salt & pepper. Broil halves 6-8" from heat for 10-12 min or until skin is golden and begins to crisp.
- Dip apple quarters into soy sauce,and place on bottom of slow cooker
- Stir wine, marmalade, lemon rind and juice into remaining soy sauce and brush over Cornish hens.
- Place Cornish hens breast side up in a 5 to 6-quart slow cooker; pour the remaining sauce over all. Cover and cook on low for 4-6 hrs if broiled (otherwise 7 hrs).
- optional: Baste after 4 hours of cooking.
- Goes well with rice (not included in calories)

Even though turkey and cornish hen belong basically to the same group i think it would be a good change for thanksgiving day along with turkey and see how family would like the added hen on the table . I have not tried it yet but it sound really good i may try it this weekend thank you. - 11/2/09
