Spinich Lasagna

Ingredients
9 - Rice Lasagna pasta sheets (Oven Ready)1 - cup of part-skim mozzarella cheese, grated2 - cups of cottage Cheese, low or fat free1/2 - cup of Parmesan cheese, grated6 - bunches of Spinach2 - 15oz cans of Tomato Sauce (No salt added)2-tsp basil, dried2-tsp oregano, dired1/2-cup onion, chopped1-clove garlic, chopped1/4-tsp black pepper
Directions
Preheat oven at 350 degrees, Lightly spray a 9 by 13-inch baking dish with olive oil.

In small bowl, combind 1/4 cup monzzarella and 1 - tbsp Parmesan cheese, set aside.

In medium bowl, combine remaining mozzarella and Parmesan cheese with all the cottage cheese. Mix well and set aside.

In medium bowl, combine tomato sauce wtih seasoning and onions.

Spread a thin layer of tomato mixture in the bottom of the baking dish. Add 3 of the noodles in a single layer. Spread half of the cottage cheese mixture on top. Add a layer of spinich.

Repeat above layering.

Add thin coat of sauce. Top with 3 noodles, remaining sauce and reserved cheese mixture.

Cover with aluminum foil, Bake 30 to 40 minutes. Cool for 10 to 15 minuutes. Cut into 6 portions.
