Okra & Tomatoes Southern Style

Ingredients
2 Tbs Olive Oil1 Whole yellow or white onion(cut in quarters and thinly sliced 1 Can Diced Tomatoes (Organic preferred)1 bag frozed okra1 Can waterSalt, Pepper, Sweetener
Directions
Saute' Onions in Olive Oil until clear, add tomatoes, okra, and water. Simmer on low heat until okra tender (not long). I use Kosher Salt or Redmonds Sea Salt and Pepper to taste. You can add a packet of Truvia or yellow or blue sweetener if you want a tad of sweetness. This is a side dish or even vegetarian entree if you serve with rice, beans, or cornbread. This makes 4 1-cup servings (estimate).
