German Fruit Pancakes

Ingredients
2 eggs1/2 cup sugar2 cups flour1 1/4 - 1 1/3 cups milkfruit - apple slices, blueberries, cranberries (to top pancakes)sugar (for sprinkling)olive oil (for cooking)
Directions
Mix egg & sugar. Add flour and milk, mix. Should be a fairly thin batter, adjust milk as necessary.

Heat oil in pan, add batter, top IMMEDIATELY with fruit. Cook until edges look about done (about 2 minutes), flip and cook a little longer (maybe 1 minute).

Put on platter, sprinkle lightly with sugar.

Serve with whipped cream and/or syrup.

Makes approximately 10 pancakes.
