Slow Cooker Minestrone

4 cups chicken broth2 cups water1 can kidney beans-drained/rinsed1 can canellini beans-drained/rinsed1 small can garbanzo beans-drained/rinsed3/4 tsp italian seasoning2 cans diced tomatoes6 carrots peeled and sliced1 bunch scallions sliced1 pckg frozen spinach thawed and squeezed dry1 12oz package rotini pasta
Put all ingredients but pasta and spinach in slow cooker for 6-8 hours on low. Cook pasta al dente. Add pasta and spinach to slow cooker, cook for about 15 minutes more. Eat!
I had a really hard time figuring out how many servings. This makes a ton! Each family member had about 1 1/2 cup serving and there was a lot left over so....I guessed 12 servings.
