Orange-Rice Salad with Pine Nuts and Pomegrante Seeds

Ingredients
2 cups of water1 cup uncooked rice1 tsp salt, divided1/4 cup white wine vinegar2 tsp grated orange rind1/4 cup orange juice1 1/2 tbls extra virgin olive oil1/4 tsp black pepper2 cups orange sections (about 3 oranges)Seeds from one pomegranate1/4 cup roasted pine nuts3 tbls chopped flat-leaf parsley
Directions
cook rice, cool rice completely. combine rest of salt, vinegar, orange rind, orange juice, olive oil and black pepper in bowl and whisk together. Combine rice, vinegar mixture orange sections, pomeganate seeds, pine nuts and parsley; fold together. Makes about 6, 2/3 cup servings
