3 tbsp margarine2 tbsp light sour cream1 large head cauliflower, chopped and steamed1/2 cup fat free half and halfSalt and Pepper to taste
Coarsely chop and steam a large head of cauliflower, approx. 25 minutes or until soft. In a large bowl, combine the steamed cauliflower and half and half. Mix on medium speed for 4-5 minutes. When lumps disappear, add margarine, sour cream, salt and pepper to taste. Mix on medium speed for approx. 2 more minutes, or until desired consistency is reached. Makes 4 servings.
