1/4 c. light soy milk2 tbsp. unsweetened cocoa1/2 c. Splenda Granulated4 tbsp. Smart Balance lite1 tbsp. vanilla1 1/2 c. old fashioned oatmeal1/2 c. peanuts, dry roasted and unsalted
Bring the first 3 ingredients to a boil in a medium-sized sauce pan on top to the stove and take off the heat. Stir in the Smart Balance and vanilla until blended and stir in the last two ingredients and drop by heaping teaspoons on wax paper to cool. When cool enough to handle, roll the cookies into balls and store in a closed container in the refrigerator. Makes 18 cookies.
