CHEESE BISCUITS

Ingredients
4 eggs¼ cup butter, melted or coconut oil (LCG: Cooking Oils) or omit¼ teaspoon salt¼ teaspoon onion powder1/3 cup sifted coconut flour (LCG: Flours/Meals)¼ teaspoon baking powder½ cup sharp cheddar cheese, shredded
Directions
Blend together eggs, butter/oil, salt, and onion powder.
Combine coconut flour with baking powder and whisk into batter until there are no lumps.
Fold in cheese.
Drop batter by the spoonful onto greased cookie sheet.
Bake at 400 degrees F (205 C) for 15 minutes.
Makes 8 biscuits.
For a cheesier biscuit increase cheese to ¾ cup.

    My ATKINS hubby liked these. We prefer with 3/4 cup option for cheese. Also, it would be good if the recipe page listed eggs as jumbo. - 2/5/16
