Oatmeal Raisin Cookies

1 cup canola oil1 cup packed brown sugar2 eggs1 teaspoon vanilla essence1 cup flour1/2 teaspoon baking soda1/2 teaspoon salt (or less)1 teaspoon ground cinnamon1/4 teaspoon nutmeg3 1/2 cups quick oats1 cup raisins1/2 cup chopped/crushed walnuts - optional1/2 cup choc chips - optional
makes 48 cookies
these were quite sweet for me so you could reduce the sugar if you aren't overly keen on very sweet cookies.
mix oil, sugar, eggs and vanilla in large bowl.
blend flour, baking soda, salt, cinnamon and nutmeg in a small bolw, them add to first mixture.
add oats, raisins and optional extras last. mix well.
drop onto greased cookie sheet.
bake in 350f oven for 10-15 mins depending on preference.
