Wonton soup

Ingredients
2 roughly chopped lean pork chops1 tsp light brown sugar1 tbsp white wine or wine vinegar1 tablespoon light soy sauce5 tsp chopped onion or scallions1 tsp minced fresh ginger root24 pre-made won-ton wrappers900 mL (3.6 cups) campbells' fat free low sodium beef broth900 mL (3.6 cups) campbell's fat free low sodium chicken broth, with 1tsp ginger and 1 tsp garlic added1 cup extra-firm, low-fat, tofu (optional)1 can mushrooms in water (optional)garnish with fresh scallions if desired
Directions
Makes 6 servings.
If lower sodium broth is available in your area, I suggest using that, or make your own broth and don't add any salt. Unfortunately this pre-packaged is high in sodium even though it suggests it isn't.

1) In a bowl mix the chopped pork with the sugar, wine, soy sauce, onion and ginger. Set aside for 25-30 minutes so that the flavours blend.

2) Place 1 teaspoon of the mixture into each won-ton wrapper

3) Wet the edges of the wrappers and press them together with fingers to seal. Fold each bundle over.

4) Bring stock to a rolling boil and boil won-tons for at least 5 minutes.

5) Season with scallions if desired.

6) For a one-pot meal add 1 cup extra-firm tofu and 1 cup canned (or sliced) mushrooms to the broth -- similar to hot and sour soup, but with the won-ton broth. This bulks the soup up without adding too many extra calories. The calories for this soup are calculated with the tofu and mushrooms added to the broth.
