Banana Muffins

Ingredients
Banana Muffins3 or 4 ripe bananas 1 egg well beaten6 tbsp. Veg. oil 1 tsp. vanilla extract (or melted margarine) 1½ cups flour½ cup sugar 1 tsp. baking soda1 tsp. salt 1 tsp. baking powder½ cup chopped walnuts or chocolate chips (opt)Mash bananas. Add oil, sugar, salt and mix. Add egg and vanilla and mix. Sift dry ingredients and mix. Add walnuts/chocolate chips. Spoon into greased muffin tin (or use paper cups). Bake 350 – 15 to 20 minutes or until lightly brown.
