Celeriac salad

Ingredients
1 cup mayonnaise2 cups celeriac/celery root2 tbsp white balsamic vinegar1 tsp kosher salt1 apple (granny smith or which you prefer)
Directions
1) Peel celeriac & use food processor to julienne.
2) Core apple & julienne - skin on adds nice flecks of color to salad
3) To avoid browning, place salad in cold water with tbsp of lemon juice & soak over night.
4) Drain salad, add mayonnaise, vinegar & salt & pepper to taste
Makes 8 servings 1/2 cup servings
