Ingredients
1 1/4 Cup Bob's Red Mill Whole Wheat Pastry Flour2 TBSP Granulated Sugar2 tsp Baking PowderEgg, fresh, 1 large1 Cup Milk, 3.25%1 TBSP Coconut Oil1/2 tsp salt
Directions
Makes 8 4" pancakes.

Stir together flour, granulated sugar, baking powder, and 1/2 tsp salt. Combine egg, milk and oil; add all at once to flour mixture stirring until just blended.

Pour about 1/4 cup batter onto a hot, lightly greased griddle or heavy skillet. Cook until golden brown, turning to cook other side when pancakes have a bubbly surface and slightly dry edges.
