Amy's Pumpkin Bars

Ingredients

1 1/2 cup Granulated Sugar2 cups pumpkin (or 1 16 oz can)2/3 cups oil4 eggs1 cup all purpose flour1 cup whole wheat flour2 tsp baking powder1 tsp baking soda1/2 tsp salt1 tsp ground cinnamon1 tsp ground nutmeg1/2 tsp ground ginger1 sprinkle of ground allspice or clovesOptional: 1 cup of nuts, rasins or chocolate chips
Preheat oven to 350 F and grease 13X9 pan.
Mix wet ingredients + sugar then add dry ingredients. If using optional ingredients, stir in last.
Bake at 350 F for 30 min. Is finished when a toothpick comes out clean when inserted in the middle.
*******Can be "healthied up" by using 1/3 cup apple sauce in place of 1/3 cup oil and 1 cup sugar. Or use Splenda to make it sugar-free. Or use all whole wheat flour instead of both kinds of flour.
