Carrots, raw, 4 medium 6 - 7 Beets - steamed, with skins then removedOnions, raw, 2 medium (2-1/2" dia)Cabbage, fresh, .5 head, medium (about 5-3/4" dia) *Imagine Organic Vegetable Broth, 8 cup Celery, raw, 4 stalk, medium (7-1/2" - 8" long) Pepper, black, 1 tsp
Makes roughly ten 1-C. servings.
Cut all veggies into uniform matchstick pieces. Add veggies and broth into a large pot. Add in 2 Bay leaves, but remove them before serving. Simmer for 2-3 hours until everything is soft. Can flavor with salt and pepper.
