Easy Southwestern Style Chicken

Directions
Bush's black beans, canned sweet corn, long grain brown rice, chicken breast or tenderloins, a jar of salsa.
Put 1 cup rice, 2 cups water (for the rice), black beans, corn and salsa in a pot. Bring to a boil. Reduce heat to a simmer and cover. Let cook 45 minutes. Test rice around 45 minutes, this will take a little personal judgement. The liquid will reduce slowly.
Cook chicken in a pan, I use chicken tenderloins because they cook quicker than breasts. Tear them in to smaller pieces with a fork, and stir the chicken in to the pot of rice, beans, corn, and salsa. Add cumin (optional). Cover and let simmer until most of the liquid is gone. Enjoy! Makes 4 or more generous servings.
Some non-fat sour cream on top is a nice addition, or some low fat cheddar cheese.
This could also be done in a slow cooker, I'm curious how that would turn out.
