Zucchini, diced tomato, onion, garlic, crushed red pepper flakes, eggs, shredded mozzarrella
In oven-safe skillet, saute onion and garlic in olive oil until soft, add diced zucchini and cook until almost tender. Pour in one 28 oz can of diced tomatoes with juice and red pepper flakes. Simmer until it starts to thicken. Make four indentations and drop an egg into each. Spread shredded mozzarella on top and put in 400 degree oven until eggs are set and the cheese starts to brown. Serve over toasted French bread if you like.
